Below I will step-by-step how you can change or add icons to the Easy Desktop. Be-patient.
#1. Do save your original simpleui.
Before you regret you cannot get back your original desktop after the mess up, since I have a SD card always in the slot, I create a eeepc folder, and inside it I copied the original folders inside /opt/xandros to it with the File Manager. You might be alerted for some unable to copy soft links, I choose to forget about them.
#2. Work with a working folder.
In order not to mess up with the saved files. I choose to work with files in another folder in the SD Card. My Case the working folder is /home/user/partition1/eeepc_files/AsusLauncher, again this folder is easy to create with the File Manager.
In the folder, I stored :
simpleui.rc,
accessibility_icon_background.png,
business_icon_background.png,
home_icon_background.png,
student_icon_background.png.
Simpleui.rc is the file you are going to mess-up with, the other png are simply background of the icons appeared if you choose other desktop theme in Personalization
#3. Choose Imaging software.
GIMP is picked to do the image works. The software have windows and linux version. I have now install it in the eeepc and my other PCs in windows XP. For installing it to the eeepc, please refer to other threads in the forum.
#4. Source the cute icons.
You may need to google some icons, image sites to pick your choice.
5. Start your so-call artiste work.
Fire up the GIMP, in eeepc Easy Desktop, you can start it with ctrl+alt+G (or House+G).
File -> Open, go to where you stored the downloaded Image (or your creation)
chick the open button to work with it.
resize the image to 80 x 80 to align with other icons : image -> Scale image, 
press the scale button, then ctrl-C to copy the whole image.
Select File->new, image size 120 x 120, Advanced Options, Fill with Transparency,
do a ctrl-V to paste the resize image to it.
File -> save as,
I give this name = printer, save in folder = eeepc_icons (icons reserved folder in my SD-Card, select File Type = PNG image.
When you click the save button, another window will popup, select Export follow by OK.
The normal icon for printer is now ready.
File->open, get your business_icon_background.png, do a ctrl-V, 
File->save as, this time the file name should be business_printer_hi.png, again the export window will pop-up, do the same export, OK.
This is the hghlighted icon for your business theme, do the above step again for accessibility, student and home theme.
Close the GIMP when you are done with your art works.
You should now have 5 icons in your folder. copy them to the eeepc_files/AsusLauncer[/b] folder.
#6. Change to the simpleui.rc
At some point, you may have your own up-to-date working Desktop, before the next mess-up, you better save your working simpleui.rc and work with the working file.
This time, we are only changing one icon rather than adding an application.
Use text editor to open the simpleui.rc (right click on the file, open with text editor).
Search printers,
change icon="xprinters_norm.png" to "printer",
selected_icon="xprinters_hi.png" to 'printer_hi.png"
save and exit the text editor.
#7. Create a script to transfer files.
In the MMC-SD/partition1 folder, I created a script file named cpAsusLauncher.sh
Follow #23 in this thread to make the file executable.
Double Click the file to run it.

#8. What if something goes wrong.
Just copy the original or your workable simpleui.rc to the eeepc_files/AsusLauncher in the SDCard, (make sure the name is simpleui.rc). Execute the cpAsusLauncher.sh again, after reboot, everything is back before your mess-up.

Remove the accessibility_ from your icon names in simpleui.rc. AsusLauncher adds them automatically

This looks very good but for those who prefer an easier life, consider SublimePorte's almost one-step tool to create and place the icon in the appropriate folder.

well, I have one question about simpleui.rc file
I obtain customized menu with my new icons following this topic.
when I update the system with 'apt-get update && apt-get upgrade', I lose modified simpleui.rc and I obtain customized menu before of insert personal icons..
so It is simple: I remodify simpleui.rc and I reobtain my personal icons.
AsusCustomizer modifies simpleui.rc and when I update the system its change there are saved (whereas my change about simpleui.rc for insert new icons there are not saved..)
AsusCustomizer writes in other files?

Yes...
Your local copy is stored in /home/user/.Asuslauncher/ and will not be overwritten (701 model eeePC)

If you have a new eeePC 900, it was moved... /var/lib/AsusLauncher/
